“ Metal Gibi Algılanabilen Plastik Malzemeler “
Yabancı madde konusunda yapılan müşteri şikayetleri, hemen hemen tüm gıda işletmeleri için sürekli bir problem olarak ortaya çıkmaktadır. İşletmede görevli Kalite, Üretim ve Teknik Müdürler için ürüne yabancı madde bulaşmasının önlenmesi ve kontrol edilmesi, her zaman birinci öncelik teşkil eden konular içerisindedir. Yabancı madde bulaşmasının önlenmesi ve kontrolü, prosesin birçok noktası üzerinde titizlikle durulmasını gerektirmektedir. İşletme içerisinde yürütülen iyileştirme ve eğitim çalışmaları, hammaddenin tedariki, depolama ve korunması, fabrika yerleşiminin tasarımı ve uygun imalat şartlarının oluşturulması, paketleme ve kontrol ekipmanlarının seçimi, kurulumu, işletilmesi, bakımı... bu noktalar arasında sayılabilecek konulardır.
Yabancı maddenin ürününüze ne zaman ve nereden bulaştığının belirlenmesi ve sonrasında bu bulaşmayı kontrol edip edemeyeceğinizin ve mevcut risklerinizin tam olarak belirlenmesi için, ürününüze bulaşan yabancı maddenin tanımlanması gerekmektedir.
Tipik olarak gıda sektöründe "yabancı madde" olarak tanımlanan ve çeşitli tekniklerle üründen ayrılmaya çalışılan unsurlar;
A. Hammaddenin hasat noktasından fabrikaya ulaşana kadar maruz kaldığı toprak, toz, çamur, böcek, dal, yaprak, iplik, çuval, poşet, kağıt...gibi proses dışı kaynaklı çeşitli kusurlar,
B. Cam, metal ve plastik parçaları gibi proses kaynaklı kusurlardır.
Hammadde kaynaklı kusurların çoğu, prosesin başlangıç aşamalarında kullanılan yıkama, spreyleme, durulama, su ile taşıma, aşındırma, eleme, hava emiş sistemleri... gibi daha birçok basit yöntem kullanılarak ortadan kaldırılabilmektedir.
Proses kaynaklı kusurların final ürüne karışmadan ve tüketiciye ulaşmadan ortadan kaldırılabilmesi ise genellikle, bir veya daha fazla yüksek teknoloji ürünü kontrol ve red ekipmanının proses hattına dahil edilmesi ve kusursuz olarak işletilmesi ile mümkün olabilmektedir.
Prosese dahil edilebilecek başlıca kontrol ekipmanları;
-Endüstriyel mıknatıslar,
-Optik ve lazerli ayırma sistemleri,
-Metal dedektörleri,
-X-Ray kontrol sistemleri... şeklinde sıralanabilir.
Üretim hattının manuel olarak gözlenmesi unutulmaması gereken bir yöntemdir. Bu yöntemde seçme işçisi için iyi şartların sağlanması, gürültü, düşük aydınlatma düzeyi ve rahatsız oturma konumu gibi olumsuzlukların engellenmesi performansı arttırmaktadır. Manuel seçmenin sadece kısa süreliğine uygulanabilir bir yöntem olduğu unutulmamalıdır.
Hammadde ve proses kaynaklı kusurların final üründe bulaşma riski oluşturmadan ayrılmasına yönelik olarak, yukarıda sıralanan tüm tekniklerin kullanılması durumunda dahi risklerin tamamı ortadan kaldırılamamaktadır. Bunun nedeni; kullanılan tekniklerin sayılan tüm yabancı maddeler için %100 netlikte bir çözüm oluşturamamasıdır. Örneğin prosesin ilk aşamalarında kullanılan basit fiziksel tekniklerle hammaddeden uzaklaştırılamayan böcek, dal, iplik, kağıt parçaları gibi organik kusurlar, X-Ray kontrol sistemi gibi kullanılan en gelişmiş ekipmanlarla dahi tespit edilememektedir.
Kullanılan mıknatıs, metal dedektörü ve X-Ray kontrol sistemlerinin hammadde veya proses kaynaklı metal parçalarına karşı hassasiyetleri ise, ürünün yapısı, metalin tipi, büyüklüğü, şekli, kontrol ekipmanı içerisinden geçiş yönü ve gıda maddesi içerisinde bulunduğu pozisyona bağlı olarak değişmekte ve genelikle belirli büyüklüğün altında tespit ve ayrılması olanaksız hale gelmektedir.
X-Ray kontrol sistemleri, metal dışında daha geniş yabancı madde tespit yetenekleri nedeniyle metal dedektörlerinden daha avantajlı olarak görülmektedir. Bu teknikte en önemli faktör; yabancı maddenin tespit edilebilmesi için, gıda maddesinden önemli derecede yoğunluk farklılığına sahip olmasıdır. Pratikte X-Ray kontrol sistemlerinin tespit edilebileceği yabancı maddeler; metal, cam, taş, kemik ve PVC gibi yoğun plastiklerdir. Plastik film, kağıt, karton, tahta, böcek, meyve çekirdeği gibi gıda maddeleri ile yakın yoğunluklara sahip yabancı maddeler X-Ray kontrol sistemleri ile tespit edilememektedir. Ayrıca bu sistemlerin fiyatları yıllar içerisinde düşüş göstermekle birlikte, hala yaygın olarak kullanılabilmek için önemli derecede pahalı olarak değerlendirilmektedirler. Bu nedenle her bir üretim hattında kullanılmaları henüz mümkün görülmemektedir.
Optik ve lazerli ayırma sistemleri, bakliyat, kuruyemiş, taze ve donmuş sebze gibi taneli yapıda ürünlerde ve yabancı maddelerin üründen ayrı bir görüntü oluşturabildiği uygulamalar için kullanılabilmektedir. Yüksek kapasiteli hatlarda kabul edilebilir hassasiyet sağlamakla birlikte, çok temiz ve standart yapıda işlem şartları talep etmesi nedeniyle kullanım alanları sınırlıdır.

Mıknatıslar ise birçok üretim hattında manyetik metallerin ayrılmasında kullanılmaktadır. Geleneksel seramik mıknatıslar somun, civata gibi oldukça büyük metallerin ayrılmasında, daha güçlü mıknatıslar ise çok küçük manyetik metal parçaların dahi ayrılmasında kullanılmaktadır. Mıknatıslar ürünün nemli veya kuru olmasına bağımlı kalmadan farklı uygulamalarda kullanılabilmekte fakat, manyetik olmayan metal parçalarına arşı etkin olmamaları nedeniyle tek başlarına proses güvenliğini sağlamada yeterli görülmemektedirler.
Bulaşma kaynakları, tipleri ve tespit yöntemleri dikkate alındığında, en kritik bulaşma riskinin plastik kaynaklı olduğu sonucuna varılabilir çünkü, kullanılan hiçbir kontrol ekipmanı, PVC gibi sert plastikler dışında plastik parçaların tespit ve ayrılmasında kullanılamamaktadır. Bununla birlikte polimer bazlı plastik ürünlerin gıda sektöründe kullanımı; paslanmaz çelik alet ve ekipmanların yüksek maliyetleri, ağır olmaları, farklı geometrik şekillere sokulabilme zorlukları, prosesteki ekipmanların her noktasına uygulanamaması nedeniyle gün geçtikçe artmaktadır. Proses dahilinde kullanım alanı sürekli artan polimer bazlı plastik malzemeler; düşük maliyetleri, hafif ve dayanıklı yapıları, esnek ve kırılmaz oluşları, kolay şekillendirilme avantajları, düşük sürtünme katsayıları, yağsız çalışabilme özellikleri, farklı renk seçenekleri nedeniyle tercih noktasında öne çıkmaktadır. Bu durum, tüketiciye sunulan final üründeki plastik bulaşma riskinin artması sonucunu ortaya çıkarmaktadır.
Polimer bazlı plastik ürünlerin en büyük dezavantajı olan, kopan parçalarının kullanılan kontrol ekipmanları ile belirlenememesi durumu, Gıda Sektöründeki alışılagelmiş uygulamaları değiştirerek yeni bir bakış açısı kazandıran, patentli polimerden üretilmiş ve mıknatıs, metal dedektörü ve X-Ray kontrol sistemlerince "Metal Gibi Algılanabilen" yapıda plastik ürünlerin kullanımı ile ortadan kalkmaktadır.
"Metal Gibi Algılanabilen" yapıdaki Detectamet materyali, Gıda Sektöründeki firmaların, tükecilerin korunması amaçlı yeni uluslararası yönetmeliklere uymalarını sağlamak amacıyla geliştirilmiştir. Bu ürünler, gıda imalatçılarına ekonomik, fonksiyonel, ergonomik ve bunların yanında gıda ile temasa uygunluğu onaylanmış alet ve ekipmanların kullanım seçeneğini sunmaktadır.
